1 c. sliced almonds
1/4 c. sugar plus 1/2 tsp. sugar, divided use
1 c. sliced almonds
2 T. lemon juice
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. white pepper
1/2 c. vegetable oil
1 head romaine lettuce, torn into bite-size pieces
11oz. can mandarin oranges, drained
1 red onion, optional

Heat small skillet, melt 1/4 c. sugar and cook until lightly browned. Stir in almonds and coat with caramelized sugar. Remove from pan; spread on wax paper and allow to cool. Combine lemon juice, Dijon mustard, 1/2 tsp. sugar, salt, white pepper; whisk in oil. Toss together in large bowl the lettuce, oranges, onion and almonds. Add the dressing mixture; toss to coat.
