1 stick of butter
1 c. flour, all purpose
1 c. sugar plus 1 T. sugar, divided use
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
2 c. fresh or frozen fruit (slightly thawed) OR 1 can pie filling OR 1 large can peaches, drained

Preheat oven to 350º. In a glass 9"x13" dish, melt the butter in the oven. Meanwhile, in a medium bowl, mix together flour, 1 c. sugar, baking powder and salt. Add milk, mixing well. Remove dish with butter from oven and pour milk/flower mixture into the butter, stirring until incorporated using a whisk. Place fruit into batter in a single layer, spacing evenly. If using pie filling, randomly place spoonfuls into the batter, but do not stir. Sprinkle with 1 T. sugar. Bake 25-30 minutes.
