3 c. sliced or chopped zucchini
3 fresh roasted green chiles
3 eggs
1 1/2 c. cracker crumbs
2 c. grated cheddar cheese
1/2 tsp. salt
1/2 c. melted butter
1 c. chopped onion
1 c. canned evaporated milk

Directions:
Directions:
Cook zucchini and onion in water, cook until almost tender about 10 minutes and drain. In a large bowl, blend remaining ingredients. Mix in drained squash & onion. Pour into a greased 9X13 dish and bake uncovered at 350º for 35 minutes.
