4 lbs. lean beef cut into 1/4 inch cubes, or 4 lbs. lean hamburger
2 cups (2 large) chopped onions
3 garlic cloves chopped
2 tbsp. Worcestershire sauce
3 tbsp. cumin powder
1/4 c. chili powder
1 can Rotel chilies. (depending on preference, can go hot to mild)
2 14-oz. cans tomato puree
1 tbsp. salt
1/4 cup ketchup
Tabasco sauce (if you prefer more heat)
1 can beer (not lite)

Directions:
Cook onions in a small amount of oil until translucent, add garlic and cook low for a few minutes. Remove from heat. In a large pot, cook the meat in a small amount of oil. Cook on high till it turns gray. Add onions, garlic, Worcestershire sauce, half the cumin and chili powder. Cook over medium heat for a few minutes, stirring often. Add chilies, tomato puree, ketchup and beer. Bring to a simmer. Add remaining cumin and chili powder. Adjust seasonings for spice and salt. Let simmer for a couple of hours, stirring occasionally. If you desire thickening the chili, you can blend about 2 cups of the mixture with a hand blender and return it to the pot.
