1 well-beaten egg
1 c 2% milk
1 c wheat flour
1 c Quaker oats
1/4 c canola oil
1/4 c Splenda (baking Splenda)
2 tsp baking powder
1/2 tsp salt
1/2 Tbsp Cinnamon
1 c raisins

Pre-heat oven to 425. Spray muffin pan with canola oil. Mix all ingredients in bowl. Bake @ 425 for 25 mins. Dump muffin pan upside down asap!

I keep them frozen till time to eat. Thaw out in microwave, cut in half and warm the halves in toaster oven, spread Smart Balance butter on them and enjoy them hot!
