8 1/2 lbs. pork trimmings, diced
1 1/2 lbs liver
1/2 c. tenderquick
5 tsp black pepper
2 tsp. sage
1 1/2 tsp. red pepper
1 1/2 tsp. allspice

Directions:
Directions:
Boil the pork trimmings for 5 minutes. In a seperate pan, scald the liver in hot water for 10 minutes (do not boil) then cool and cut into cubes.

Mix the spices together in a small bowl and toss together with the pork and liver.

Grind it all adding a small quantity of water to soften the mixture. Stuff wide casings with the mixture making sure the open end is sealed closed.

Simmer them in hot water for 20-30 minutes. DO NOT BOIL. Submerge them into cold water and chill thoroughly. Hang or place them in a cool place to drain.
