1 c. fine white corn meal
1/4 tsp. salt
1 T. sugar
3/4 c. boiling water
3-4 T. oil for frying

Directions:
Directions:
In a bowl, mix the dry ingredients together. Add the boiling water and mix well. Let the batter stand for 2 minutes.

In a frying pan on medium heat, heat the oil and drop the batter into the oil by Tablespoons making pancake like cakes. DO NOT TOUCH them for 4 minutes. Touching the cakes will make them break up. You want them to form a deep golden crust on the outside.

Flip the cakes over and cook another 4-5 minutes on the other side. Serves them with butter on top.
