2 pounds cubed potatoes
1/2 cup onion, diced
1/2 cup celery, diced
1/2 cup carrot, diced
4 cups chicken broth (room temp.)
4 cups milk (room temp.)
1 lb Velveeta cheese, cubed
1 teaspoon salt & pepper
1/8 teaspoon Tony Chachere'sŪ (optional)
1 tablespoon dried parsley

Directions:
Directions:
Combine chicken broth, potatoes, onion, carrot, parsley, salt, pepper, and Tony's in a large pot. Bring to a boil over high heat. Reduce heat to medium-low; add milk and processed cheese, cover and simmer until the potatoes are tender, about 30 minutes.
