2 8.5 oz boxes of Jiffy corn muffin mix, prepared as cornbread
1 whole chicken boiled with skin and bones removed
1 onion, chopped
2 to 3 sticks of celery, chopped
1/8 C. poultry seasoning
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
4 boiled eggs chopped (optional)
chicken broth enough to thoroughly soak the cornbread, about 3 cans

Boil one whole chicken. Remove bones and skin. Cut up in pieces and refrigerate while preparing cornbread. Prepare a double recipe of cornbread as directed on box. Allow cornbread to cool and crumble up with your hands in a large bowl. Add chicken, onion, celery and seasonings and soak with chicken broth just enough to be really wet. It will look like raw dough. Spread in a greased 13x9 pan and bake at 350 for 30 to 45 minutes until a knife inserted in the middle comes out clean.
