1 1/2 lbs Horner Farms Artesia, New Mexico Pinto Beans (The Very Best!)
2 large yellow onions, chopped
1 cup celery, chopped
1/2 cup parsley, chopped
1/2 cup green bell pepper, chopped
3 T. minced garlic
3 bay leaves
2 T. thyme
1 T. garlic powder
1/2 lb. uncooked bacon cut into bite sized pieces
1/2 lb. good smoked sausage, sliced
1/2 lb. smoked ham hocks or just chunks of a cut up ham
3 large cartons of chicken stock or more

Start this after your first cup of coffee. Wash, rinse and sort beans. Put the beans in a large stockpot and cover with the chicken stock. Add everything else, making sure that all of it in the pot is covered with either chicken stock or water. Bring it all to a boil and cook boiling for about 10 minutes. Reduce the heat to medium and cook a few hours or until the beans are soft. Stir the pot once in a while (you don't want the beans sticking to the bottom) adding more stock or water if needed. When done, fish out the bay leaves. Serve yourself a big soup bowl full of 'em, pour yourself a glass of sweet tea or cold milk, sit down in front of the TV watchin' Fox News and enjoy.
