1 medium eggplant
1 egg beaten
1/2 cup milk
2 tbsp melted butter
1 small onion chopped
1 cup dry bread crumbs

Directions:
Directions:
Pare eggplant and cut into one inch cubes
Cook them in boiling salted water for 8 minutes
Drain and add egg, milk, butter, onion and dry bread crumbs.
Place in greased baking dish and top with butter bread crumbs
Bake in 350 degree oven for 30 minutes
