1/3 cup softened margarine
1/3 cup brown sugar
1/2 cup coconut
1 box Duncan Hines (or any brand) blueberry muffin mix
1 small can (8 1/2 oz.) crushed pineapple, well-drained

Pre-heat oven to 400. Mix softened margarine, brown sugar and coconut together and set aside. Prepare muffin mix as package directs. Fold in drained, crushed pineapple. Pour into greased 8" x 8" baking dish. Spoon coconut mixture over batter. Smooth out a bit. It will spread out as it bakes. Bake for 25 to 30 minutes.

This is a very easy, quick coffeecake to whip up. And it's very moist and delicious. (Pineapple is the secret ingredient.) The first time I made it (actually several of them) was for a mother's brunch when Paul was in first grade. Kids and moms loved it.
