4 Pork Chops
3 T. Butter, divided
1 c. Mushrooms, finely chopped
1/2 c. Parsley, finely chopped
1/3 c. Red Onion, finely chopped
1 Egg
1 tsp. Salt
Dash Pepper
2-3 T. Cheddar Cheese, grated

Directions:
Heat 2 tablespoons of butter in a skillet. Brown chops on both sides. Place browned pork chops in 13x9 pan, set aside. Sauté mushrooms in remaining tablespoon of butter. Set aside to cool. In a small bowl, mix mushrooms, parsley, onion, egg, salt and pepper. Place on top of browned chops. Bake at 350º for 30 minutes. Sprinkle with cheddar cheese and return to the oven to bake an additional 10 minutes.
