3 lb. rump roast
2 bay leaves
1 large onion
2 carrots
2 stalks celery
V8 - medium can
College Inn chicken broth (or beef broth)
salt, pepper,margarine
boiling water

Directions:
Directions:
Preheat oven 350ºF Roasting time 3 hrs.

Place Pot Roast in a pan, pour boiling water over meat....just enough to seal.
Pour 1/2 can V8 over roast
Rub meat with margarine, salt & pepper (if fat strip is on top of roast, skip margarine).
Cover pan put in oven.
Cut carrots, onion & celery into chunks.
After 1/2 hour baste roast and add bay leaves & vegetables to pan.
Baste every 1/2 hour and add more V8 & broth as needed.
Leave cover off for last hour of cooking.
After 3 hours remove roast from pan.
Prepare gravy in pan: Remove bay leaves.
Pour through a sieve, mashing vegetables through sieve.
Heat strained sauce, add salt & pepper to taste............Enjoy
