1 cup sifted cake flour
1 cup sugar
12 large egg whites at ROOM TEMPERATURE
½ teaspoon Cream of Tartar
¼ teaspoon salt
4 egg yolks
½ teaspoon orange zest
1 tablespoon orange juice

Set oven at 350
1. Sift together flour and sugar. Set aside.
2. Beat yolks, zest and juice in small bowl until foamy and light yellow in color.
3. Beat egg whites, tartar and salt until stiff peaks form. Use an electric mixer if you have one. This step provides tiny air bubbles that expand when heated and make the cake rise while baking. There is no other leavening agent in the recipe. Also no oil or butter.
(Now for the tricky part of combining the yolk and flour mixtures with the egg whites without making them fall.)
4.First with a wire whisk gently and slowly pour the yolks in a slow stream while folding it into the whites.
5. Put the flour/sugar mix back into the sifter and slowly sift it into the white/yolk mix while folding it into the egg mixture. Go slow or the whites will collapse
6. Pour the batter into an UNGREASED 10 inch tube pan and bake for about 1 hour.
7. When done invert the pan and allow to cool. Rap pan sharply to loosen cake and place on cake plate.
8. Make a glaze of powdered sugar and 1 or 2 tablespoons orange juice and drizzle on top and let a little run down sides of cake. ºººº

This recipe is from my aunt, Anna Roszkowski. Born in Poland, she came to the US with her sister. She was an excellent cook and her cakes were really good. This is my favorite.
