2 c. Bisquick Baking Mix
2 t. sugar
1 egg
2/3 c. water or milk
1 c. finely chopped apple

TOPPING:
1/4 c. sugar
2 t. Bisquick Baking Mix
2 tsp. cinnamon
2 t. firm margarine

TOPPING:
Mix 1/4 c. sugar, 2 t. Bisquick Baking Mix, 2 tsp. cinnamon, and 2 t. firm margarine until crumbly.
NEXT:
Mix baking mix, sugar, egg, and water; beat vigorously 30 seconds. Stir in apple. Spread batter in pan; sprinkle with topping. Bake at 400º until wooden pick inserted in center comes out clean, 20-25 minutes. Refrigerate any remaining coffee cake.
