Pre- Mix # 1 in Ziploc:
1 cup dry instant mashed potatoes
1 tsp dried chives

Pre- mix #2 in Ziploc:
1/2 cup flour
1 tsp cajun spice
1/2 tsp black pepper
1/2 cup powdered milk
2 tsp baking powder

In another ziploc:
1/3 cup cornmeal

Oil for frying
topping if desired: sweet chili garlic sauce or similar

Directions:
Directions:
Boil 1 cup water and mix it with pre-mix #1. When potatoes are cool enough to handle, add pre-mix #2 (flour mixture) and combine well. Make into patties and dip in cornmeal until they are covered. Fry over medium heat in an oiled pan until golden. Serve with chili sauce if desired. serves 3-4 people.
