6 Rabbits
1 whole Yellow Onion large
1/4 cup Vegetable Oil
1/2 cup All Purpose Flour
1 teaspoon Salt estimate
1/2 teaspoon Black Pepper estimate
1/4 cup Cider Vinegar
1 square Cheese Cloth enough to make two four inch squares
2 cups Water
2 cubes Chicken Bouillon optional

Directions:
Directions:
1. Salt and pepper rabbit parts and dredge through the flour
2. Heat oil in frying pan (large iron is preferred) brown the rabbit on each side (3 to 5 minutes until brown) Do not clean the pan. The drippings will be needed to make a rue/gravy for roasting
3. Place the browned rabbit into a (large) roasting pan
4. Slice Onion and place on top of the rabbit
5. Place 1 cup of water into the frying pan and bring to a boil
6. Make a rue from the drippings in the frying pan using 3 table spoons of
flour and 1 cup of water. Add this to the frying pan along with the cider
vinegar return to boil then remove from heat and pour over the rabbit in the
roasting pan add the bouillon cubes (optional)
7. Using the two four inch squares of cheese cloth make two bags of pickling spices an place these in the roaster. You will need cotton string to tie the bags
8. Cook covered at 350 degrees for 3 - 4 hours until rabbit is tender

Clean and quarter the rabbit this would be removing the front and hind legs and keeping the back. Remove the rib-cage as this is not needed

Secret is to acquire pickling spices from the Amish. Easy if you search around Bowling Green MO.
