1 lb. Italian Sausage
1 egg
1/2 cup bread crumbs
1/2 cup red pepper, diced
1/2 cup pepperoni, diced
1/3 cup celery, diced
1/4 - 1/3 cup scallion, sliced green part only
3 T. fresh parsley, chopped
1/8 tsp. garlic powder to taste
black pepper to taste
2-3 dashes hot sauce

Directions:
Directions:
Preheat oven to 375º. In a large bowl, combine sausage,
bread crumbs and egg. Mix lightly together. Add remaining
ingredients and thoroughly combine until well blended. On a
medium size sheet pan, spray with cooking spray. Roll
meatball mixture into 1 inch size pieces and place on sheet
pan. Bake 10-12 minutes or until no longer pink. Place on
serving tray and garnish.
