1 11oz. can corn
1 can (15 oz.) black beans, rinsed and drained
5 scallions, thinly sliced
1 red pepper, diced
1 Anaheim pepper, diced
1/3 C. rice wine vinegar
1 T. Dijon mustard
2 C. tomatoes, diced
1/2 C. Vidalia onion
1 T. olive oil
2/3 C. parsley, chopped
tabassco to taste
pinch cayenne
salt and pepper
clove garlic, minced

Directions:

Mix all ingredients and put in fridge at least 2 hours. Serve
with nacho chips.
