5 Large Showcase Morrel Halves. (10 halves)...cleaned, soaked, and dried 8 chopped up morrel pieces,finely chopped (clened soaked dried) 1/2 stick sweet butter 1 squeeze fresh lemon fresh chopped garlic shake of Worshteshire sauce Wild garlic chives....chopped or other herb such as Chervil 1/2 cup seasoned breadcrumps 1 egg white

Directions:Morrel Duxelles and Stuffing In a large non reactive skillet medium high saute chopped morrels in butter with garlic, lemon, and shake of Worsshestishire (sp?) sauce. Cover and concentrate flavour until your nose really notes fragrance lightly brownded. Place in a mixing bowl with beaten egg white and seasoned bread crumbs and chopped chives or chervil.
Preheated 400 oven and shavings of Stilton Cheese
Butter a cookie sheet/jelly roll pan. Take a morrel half, fill it with stuffing, and top with a slice of stilton. Repeat till all done...adding more stilton if possible. cook for 20 minutes appx..the cheese will be lightly browned and bubbling.
Enjoy with a glass of wine..this is a very great appetizer! |
