6 eggs, separated
1 1/2 c. sugar
1/4 tsp. salt
2-3 T. flour
4 c. milk
2 c. heavy cream or half and half
1/2 c. white corn syrup
4-6 tsp. vanilla for vanilla ice cream
2 tsp. plus 4-6 T. cocoa for chocolate ice cream

Directions:

Mix egg yolks, sugar, salt, flour (and cocoa if making chocolate ice cream) into a 6 qt. sauce pan with 1/2 c. milk. (I add 1 c. milk.) Mix well.

Cook 5 min. or more until it thickens while stirring. (If more than 2 1/2 T. flour is used add another dash of salt.) Stir frequently to prevent scorching.
After thickened, remove from heat. add 1/2 c. corn syrup and cool. Add vanilla. Beat egg whites to a soft peak and fold into cooled mixture. (if mixture is too hot to safely add the egg whites, add 1-2 cups of milk.) Pour into 1 gallon ice cream freezer canisters; finish filling with cream and milk to designated level. May be chilled in refrigerator for several hours.

Crank until firm; follow the equipment instructions given regarding the ratio of ice to salt for your freezer.
