Porc Diplomat Sauce:
1 teaspoon Water
2/3 cup Sugar
2 teaspoons Black pepper
3 tablespoons Garlic chopped
2 1/2 quarts Chicken stock
1 1/2 tablespoons Mushroom soy sauce
2 cups Heavy cream

Marinade for Pork Tenderloin:
1 tablespoon Garlic chopped
2 tablespoons Sugar
1 pinch Salt – non kosher
1 teaspoon Black pepper
1/4 cup Mushroom soy sauce
1/4 cup soybean oil
Pork tenderloin, raw 2 lbs

Making Porc Diplomat sauce:
1. In pot, add sugar, 1t water – let sugar caramelize (stir and watch carefully)
2. Once sugar is caramelized lower heat and add black pepper and garlic
3. Stir to mix well, add chicken stock and stir to dissolve well
4. Stir in mushroom soy sauce
5. Bring to boil and let sauce reduce for about ½ hour
6. Add heavy cream and reduce 30 minutes longer, until thickened

Making pork tenderloin:
1. In a large bowl mix sugar, salt, black pepper, mushroom soy sauce and garlic well
2. Add oil and whisk to blend
3. Add pork and turn to coat well and evenly
4. Clean and oil grill, grill tenderloin to mark both sides
5. Finish cooking in oven at 325 degrees F for 12 minutes
6. Let sit for 10 minutes, tented under aluminum foil for 10 minutes
7. Slice thinly, place on plate and ladle sauce on top, saving sauce for gravy boat

Serving suggestions:
Often served atop grilled eggplant slices with Thai spring rolls
