Ingredients:  
White fish, enough to fill a half gallon pail after being cut into pieces.

Cut fish into about inch wide strips.

Soak in salt brine 48 hrs. 2 cups salt to 1 gallon of water. Drain, cover with white vinegar for 24 hrs. Drain and put on brine.

Brine:

4 cups white vinegar
3 cups sugar
1/4 cup whole pickling spice

Heat to boiling, cool, then add 1 cup White Satin Wine.

Slice in as many onions as you like, also thin slices of lemon are good. Make as many brines as needed to cover fish. Let stand one week in refrigerator. Stir every day. After one week you can seal in jars.
