3/4 c vegetable oil
1 c brown sugar
2 eggs
1 T water
2c (1lb) grated carrots
1/2 c matzoh meal
3 T potato starch

Directions:

Combine all ingredients and pour into greased casserole.
Bake 350º fir 40-45 minute or until top feels firm.

Perfect for Passover. If making other times of year, 1 1/2 c flour ad 1 t baking powder can be substituted for matzoh meal and potato starch.
