2 cups of flour
1 teaspoon baking powder
1 cup milk
1/2 cup oil
2 eggs
2 teaspoons sugar
1 teaspoon salt
2 1/2 cups frozen Spinach
1 cup Feta cheese

Directions:
Directions:
Preheat oven to 350°. Line a muffin tin with 12 liners. Thaw Spinach and press well into a colander to drain of excess water. Cut Feta into small cubes. In a mixing bowl, add remaining ingredients and mix well with an electrical mixer till smooth. Add the Spinach and Feta then mix with a spoon. Divide the batter into the 12 muffin liners and bake for 20-25 minutes. While they are baking, make the frosting. Mix cream cheese with milk until smooth. Spoon or pipe a dollop on each slightly cooled muffin. Serve immediately. Doubles well.
