1 8 ounce package of cream cheese, room temperature
1-1 1/2 cups chopped dill pickles
1/4 cup finely chopped onion
2- 4 tablespoons pickle juice
1 teaspoon dried dill weed
1/2 teaspoon kosher salt
freshly ground black pepper, to taste

Directions:

Chop dill pickles in a food processor. Drain well in a colander, saving the juice. When cream cheese is very soft, fold the pickles in. Add the onion and dry seasonings until evenly distributed. Add in the pickle juice until the desired consistency is reached. Transfer to a serving dish and cover with plastic wrap. Refrigerate for at least an hour before serving. Serve with hard cheese crackers.
