4 medium red potatoes, cut into 6-8 pieces each
6-8 medium carrots, cut into 4-6 pieces
2 stalks of celery, cut into 4-6 pieces
1 small head of cabbage
1 corned beef with spice packet

Directions:
Directions:
In the bottom of a large crock pot, place diced potatoes, carrots, and celery.

Trim all excess fat from the outside of the corned beef. Lay on top of the vegetables. Either put the corned beef spice packet that came with the corned beef directly into the crock pot, or use a tea ball to hold the spices. Fill the crock pot with hot water until just covering the meat.

Cut the cabbage into quarters. Remove the hard core. Place the cabbage on top of the meat, and on top of the water.

Cover and cook on high for a minimum of 1 hour or longer if the water is not boiling. Reduce the heat to low and cook an additional 4 hours. Test a piece of meat to determine of cooked to tenderness before serving.
