5 lb russet potatoes (peeled)
1 small onion
3 eggs
4 heaping T flour
1 t salt
dash of salt
canola oil (for frying)
applesauce and sour cream (for serving)

Directions:
fit food processor with grating disk and grate potatoes and onions
in batches.
as grated potatoes and onions fill bowl, remove them to colander to drain.
remove grating disk and fit food processor with steel knife blade.
place 2 handfuls of grated potatoes and onions and pulse for no more than 10 seconds total time until potatoes no longer resemble hash browns
Do not overfill work bowl work in five bunches.
return processed potatoes and onions to colander.
squeeze out excess water.
place potatoes and onion in mixing bowl and combine eggs, flour, salt and pepper.
Over medium high heat in an electric frying pan or medium frying pan,
heat 1/4 inch of canola oil.
when oil is hot, use large slotted spoon to scoop up about 1/3 c latke batter. let excess liquid drain from spoon then place batter into hot oil,
forming 4 inch latkes. fry them 4 at a time, until edges brown.
turn latkes and fry until both sides are golden brown.
serve latkes hot with applesauce and sour cream.
