5 to 6 cups cauliflower florets, about 1 1/2 inches in diameter (from 1 medium cauliflower)
1/8 cup extra-virgin olive oil
1 tablespoon crushed garlic
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
Optional: 2 tablespoons grated Parmesan

Preheat the oven to 500 degrees F. This is a very hot oven so watch carefully. You can roast at a lower temperature for longer as well (e.g. 400 degrees for 25 to 30 min.). Place the cauliflower florets in a large saute pan or a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper. Stir to make sure the cauliflower is well-coated. Place the saute/roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the Parmesan, if desired. Serve and enjoy!

Use as little oil as possible to make this healthy. You can use your hands to rub all of the ingredients on and make sure the cauliflower is evenly-coated. Use this for other veggies as well.
