2 1/2 c. milk
2 1/2 T. cornstarch
1/3 c. sugar (reduce to 1/4 c. if desired)
1/4 tsp. salt
2 egg yolks
1/4 c. milk
1 tsp. vanilla

Directions:
Directions:
In a small bowl, dissolve the cornstarch in the 1/4 c. milk. Add to it the sugar, salt, and beaten egg yolks. Mix thoroughly.

In a saucepan, slowly bring the 2 1/2 c. of milk just to the boiling point over medium heat while stirring frequently to prevent scorching on the bottom of the pan. DO NOT ALLOW TO BOIL. Slowly, while stirring with a whisk, pour in the egg mixture. Stir constantly until thick. Stir in the vanilla, and pour into bowls.

Serve when cool. Top with fruit or coconut.
