2 eggs
2 c. flour
1 1/2 c. milk
1 T. oil
1/4 tsp. salt
1 T. sugar
1/2 tsp. vanilla

Directions:
Directions:
In a mixing bowl, beat together all ingredients except the flour. Once combined, add the flour slowly and beat until smooth.

Heat oil (or Pam) in a medium sized shallow frying pan. Add approximately 1/2 c. batter to the hot pan and swirl the batter until the entire pan is evenly covered. Cook until the top is dry, then flip over and cook momentarily.

Fill crepe with fruit, jam, or other desired items. Roll up the crepe and sprinkle the top with powdered sugar.
