3 eggs
2 cups sugar
2 cups grated carrots
1 cup chopped walnuts
1 cup crushed pineapple (drained)
1 1/4 cup salad oil
1/2 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp soda
1/2 tsp salt
1/2 tsp cinnamon

Directions:
Directions:
Beat eggs lightly. Add sugar and beat. Stir in carrots and nuts. Add pineapple, oil, vanilla, and mix well. Sift flour with salt, cinnamon, soda, and baking powder. Add dry ingredients to carrot mixture and beat. Bake at 325º for 50 to 60 minutes, 3 layers or 9x13x2 inch oblong pan.
