10 medium, ripe tomatoes, sliced
1 1/2 c. sharp cheddar cheese, shredded
1 3/4 c. mayonnaise (I prefer Dukes for this recipe)
1 T. onion, grated or minced
15 sliced "day old" bread
salt and pepper to taste

Mix mayonnaise, cheese and grated onion. Season with salt and pepper. In a greased 9"x13" casserole dish, layer the bottom evenly with 7 slices of the bread that has been cut into medium sized cubes. Create a layer of tomatoes (about half of the slices) by overlapping them in single fashion the length of the dish. Season liberally with salt and pepper. Trim the crusts from the remaining bread and arrange them on top so as to cover the entire surface of the tomatoes. Spread not quite half of the cheese mixture on top. Do not use more or the pie will be soggy. Arrange the remaining tomatoes in the same manner as before on top of the cheese. Season liberally with salt and pepper. Dollop the remaining cheese mixture in rows across the top. Bake uncovered at 375º for approximately 25-30 minutes, until the cheese mixture on top becomes golden brown.
