About 6 hand of Green bananas, 2 pound of yatia (cazava)and 2 pounds potatoes , 3 platanos, 1 (24) oz bottle of green olive with capers, (also u could use olive with no capers) 1 box of raisin, 1 can of 24 oz roasted red pepper , 1 large onion cut into small dice, 2 large green peppers cut into small dice, 6 garlic cloves chopped and minced, 4 aji dulce also chopped, achiote for color ,adobo goya, salzon goya, sofitos goya , banana leaf, bay leaf, salt and black pepper (also white paper for pateles ) they are sold in spanish stores.

In a food processors, after peeling the green banana, put them in the food processors to make a batter of bananas and platanos, potatoes and yatia. Make sure you have a big bowl to put the mixture in. After everything is process and done add 3 to 4 tsp of achiote, pinch of salt and 2 package of sazon goya and 1 tsp of adobo, mixing everything together to get a batter with a nice color. Set that to the side and start cutting your pork in small dices. In a crook pot add some vegetables oil and start to cook your pork for atleast 20 minutes then start adding onions, pepper, 2 tbsp of sofrito and 2 packages of sazon and 2 cup of achiote, and raisin, green olive, and sazon. The rest of the ingredients, let that cook for another 15 to 20 minutes and set on the side, now let's start the assembly first , cut your string about 36 inches and set aside. Ok let's start, place your paper on the table and use a ice cream spoon or (with a servin spoon ) put a spoon on top of the paper spread it like a pancake and in the middle of that add you pork now folding it in half the paper make your mixture come together in and make another folding to make it look like a burrito. Then get your sting and start taying tie like a burrito. See picture above for sample And Bon Appetite.
