1 3/4 c flour
4 T sugar
3 t baking powder
1 t salt
1 egg (beaten)
1/4 c melted shortening
3/4 c milk
1 c corn

Directions:

Sift dry ingredients. Beat egg in bowl. Add cooled melted shortening. Add milk. Add dry ingredients. Mix well. Add corn. Drop by teaspoonfuls into hot oil (about 3 inches deep. Turn if necessary. Cook until brown and drain on paper towel.

On a family vacation many years ago, Momma whipped up some squash fritters using this same recipe omitting the sugar and corn. The squash was lightly sauteed along with sliced onions and they were yummy! Momma was fearless in the kitchen and experimented a lot...everything she made turned out just right.
