1 c. butter, softened
1 1/2 c. packed light brown sugar
1 egg
1 1/4 tsp. vanilla extract
2 1/2 c. old-fashioned rolled oats
1 c. unbleached all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. plain M&M's©
1/2 c. raisins
3/4 c. chopped nuts
1/4 c. shredded coconut

Preheat oven to 350º. Cream butter and sugar with an electric mixer on medium speed in a large bowl until fluffy. Add the egg and vanilla; beat at medium speed until combined, about 30 seconds. In a separate bowl, combine the flour, baking soda and salt, then add to the butter-sugar mixture. Blend well. Next stir in the oats, raisins, nuts, coconut and M&M's to the butter-sugar mixture, setting aside about 1/4 cup of the M&M's. Mix until just combined. Shape dough into generous tablespoon-sized balls and drop onto a prepared baking sheet, spacing cookies at least 2 inches apart. Press a couple of the reserved M&M's onto each cookie. Bake until the cookie edges turn golden brown, about 10 minutes. Remove to wire racks and cool completely.
