1 beef roast about 21/2 lb.

pepper
potatoes
carrots
1 large parsnip (optional)
celery
onion
1 bay leaf
1 tsp. dried rosemary
1/2 dried thyme
1/2 c. beef broth

Directions:
Directions:
salt and pepper to taste on all sides of roast. Brown roast on all sides.
wash and cut up vegetables and place all around roast. Mix spices together (do not crumble bay leaf) and sprinkle over vegetables. Pour over broth. Bake at 350 degrees until meat is tender and vegetables are cooked.

If you want to do this in the crock pot cut beef into serving-size pieces and vegetables are cut into about l1/2 inch pieces. Cooking in the crock pot will take about 81/2 to 9 hours. To make gravy- for each cup of juice,mix
1/2 c. cold water and 2 tbsp. flour until smooth. Add to the boiling juice, stirring constantly.cook until thick.
