Jack and Coke Chili
This is a staple in our home. The garnish really makes the dish, and shouldn't be skipped. Serve with a bourbon cocktail and some delta blues.

1 Stick Butter
1 Diced Red Onion
1 Diced Jalapeno
1 Diced Serrano
4 Cloves Garlic
1 15 oz. can Diced Tomatoes
2 15 oz. cans Black Beans
1 15 oz. can Kidney Beans
1/3 cup Jack Daniels (plus 1/2 cup for the chef)
1 can Coca Cola (not Diet or Coke Zero. Hippies.)
2 Ancho Chilis
S&P to taste

Soak ancho's in warm water for 1 hour to start.

In large pot, melt butter over medium-high heat and sweat onions until translucent. Add diced ancho's, minced garlic and bourbon. Simmer 3 minutes, but don't burn the garlic!

Add everything else and bring to a boil. Reduce heat and simmer for at least 30 minutes.

Garnish:
Diced Cilantro
Sour Cream
Shredded Cheese
Diced Sweet Chili's
Tortilla
