Olive oil
1 red onion
1 red pepper
2 coves garlic
chicken sausage
1 tsp smoke paprika
200gms rice
1/2 c white wine
2 c chicken stock
spring onion
1 tomato
small bunch parsley

Directions:
Directions:

Heat oil and fry onions for 5 minutes until soft but not colored.
Add pepper and garlic and cook for 2 mins.
Slit sausage skins and crumble sausage meat into pan, cook over med heat until cooked, add smoked paprika and mix. Season to taste.
Add rice and stir well to mix and absorb flavor. Deglaze the pan by pouring in the white wine and scrape any bits stuck to bottom.
Add stock and bring to a simmer. Cook gently for 15-20 mins until rice is tender.
Remove from heat and fold in spring onions, tomato and parsley.
