Green chili paste 2-3 T.
2 T. oil coconut is good
1 T. dried lemongrass
1/2 t. coriander
1/2 t. cumin
1 c. chopped cilantro
1 serrano pepper minced
3 T. fish sauce
1 T. brown sugar
2 T. lime juice and zest
14 oz coconut milk
1.5 lbs cooked chicken breast chopped
1 red bell pepper chopped
1 bunch fresh basil chopped
Salt and pepper

Directions:
Heat oil in wok or skillet. Add paste (and chopped shallot if like) saute 1-2 min. Add chili, seasoning, fish sauce, brown sugar, etc. and cook few minutes until fragrent.
Add coconut milk, chicken and simmer 5 min. Add red pepper and zest. Simmer 4 min then add fresh basil. Season to taste
Serve with brown rice, top with more basil if like
