Italian Spice Cookies (Toto's) Recipe

6 Eggs
1 cup Sugar
6 cups Flour
2 tsp Allspice
3 1/4 tbsp Coco
1/4 jar cherries, drained and finely chopped
1/4 lb Raisins ( cut in half after placed in boiled water for 1 minute)
4 oz Milk
1 cup Crisco (solid)
2 tbsp Baking Powder
2 tsp Cloves
2 tsp Almond Extract
1/4 lb Walnuts, finely chopped

Icing
1/2 box Confectioner Sugar
1 tsp Almond Extract
1 tsp Water

Directions:
Directions:
Preheat over to 400º
1. Beat eggs, crisco, sugar and milk with electric beater on medium speed.
2. Beat in spices, nuts, coco and raisins.
3. Add cherries and mix by hand.
4. Add baking powder and flour, again, mix by hand.
5. Form dough into 1 1/2 inch balls.
6. Bake for 6 - 10 minutes.
7. Cool cookies completely.
8. Mix confectioner sugar, water and almond extract, if necessary add more water to make icing very thin.
9. Place cookies on wire rack with a cookie sheet underneath it.
10. Drizzle cooled cookies with icing. Let icing dry, then drizzle again.

Can be kept for up to 3 weeks in tightly sealed container.
Recipe yields about 200 cookies.
