2 tbsp dried shrimp
1/2 tsp salt
4 cloves garlic chopped
1 birdseye chili
2 tbsp brown castor sugar (coconut sugar)
1 tbsp tamarind paste (add water if needed)
2 tbsp fish sauce
1 lime - juice (add another if needed)

1/2 green papaya
1 large shallot
2 carrots grated
1 c thai basil
1 c chopped parsley
toasted peanuts

Directions:
Directions:
Use mortar and pestle for dressing adding ingredients one at a time.
Taste and add additional lime juice as needed.

Mix 30 minas before serving
Top with toasted peanuts
