1 whole salmon
Louisiana seasoning blend
1 onion, finely chopped
8 oz. mushrooms, quartered
10 oz. fresh spinach (2 heaping handfuls)
3 garlic cloves, diced
olive oil

Directions:
Directions:
Marinate salmon for at least 15 minutes with Louisiana seasoning blend. Using a large saute pan, heat oil, add onion and cook until tender; add mushrooms and garlic, cook until slightly tender; remove from pan; place marinated salmon in saute pan, cook on one side 2 minutes, then cook on other side 1 minute; add onions, mushrooms and garlic; add spinach; add a little sprinkle of Louisiana seasoning; cover with lid and cook for 1-2 minutes. May substitute fresh salmon with individual frozen salmon, thaw before cooking.

Variation: Use shrimp rather than salmon, or use both. When using shrimp, cook in saute pan with some butter, 2 minutes per side, sprinkle with some Louisiana seasoning, too. Cook salmon separate from shrimp in same pan if using both for your dish. Then, place both shrimp and salmon together in saute pan, follow directions above for adding other ingredients. Serve with French bread and salad.
