2 Potatoes
4 tbsp Butter, melted
1 cup Shredded Cheese
1 cup Sour Cream
6 slices Bacon, cooked and crumbled
2 tbsp Horseradish
1 Scallion, diced
1/2 cup Tomatoes, diced

Directions:
Directions:
1. Bake potatoes in oven or microwave until knife is easily inserted in potato.
2. Cut potatoes in half and scoop out potato flesh.
3. Cut skins in half again, brush with butter, salt and pepper and bake in oven at 450º for 10 minutes.
4. Last few minutes of baking scoop in potato flesh and cheese.
5. Remove from oven.
6. Mix sour cream and horseradish.
7. Top potatoes with sour cream mixture, scallions, tomato and bacon.
