2/3 llb elbow macaroni (4 C cooked)
1 1/2 c milk
1 1/4 T flour
1 1/4 T butter
4 oz American cheese
4 oz sharp cheddar cheese
1 lb ground beef
1/2 c diced onions
1 T chopped garlic
2 T Dijon mustard
2 T ketchup
kosher salt and pepper to taste
1/4 c bread crumbs (if desired)
3/4 c sharp cheddar (for top)
Directions:
Directions:
toss pasta lightly with olive oil
in sauté pan over medium heat
sauté ground beef
drain fat and put back on heat
add onion, garlic, mustard, ketchup, kosher salt and pepper
brown and remove from stove.

in a separate sauce pan, bring milk to a boil and remove from heat.

in a separate sauce pan, melt butter
reduce heat and whisk in flour for 3-4 minutes.
do not brown
slowly add milk
stir occasionally
add cheeses and bread crumbs if desired
put in oven for a few minutes to melt cheese and brown breadcrumbs.
