2 medium sweet potatoes 4 black peppercorns 1 red onion, sliced
1 cup red-wine vinegar 1 tsp. salt ¼ tsp. black pepper
¼ cup sugar 8 whole wheat tortillas 5 cups spinach
1 cup shredded mozzarella 4 tsp. olive oil

Directions:

1. Microwave potatoes for 15 minutes, or until tender
2. Meanwhile in saucepan over medium heat, combine peppercorns, vinegar and sugar. Stir until sugar is dissolved.
3. Place onions in glass bowl and pour hot vinegar mixture into bowl. Let cool for 10 minutes. Drain onion slices and put onions on plate.
4. Split potatoes open with knife. Remove flesh and transfer flesh to a bowl. Use a fork to mash potato. Add salt and pepper.
5. Place whole wheat tortilla shell on plate and spread potato filling over top. Add large handful of spinach and place all over tortilla. Do the same with ¼ cup cheese and cover with another tortilla shell.
6. Once all quesadillas are made, pour 1 teaspoon of olive oil in pan over medium heat and place 1 quesadilla in pan. Cook for 3 minutes on each side and repeat for each quesadilla. Make sure to keep adding olive oil every time you use a new quesadilla.
