¾ brown rice 1tbsp. olive oil ¾chopped celery
1 can pineapple chunks 1tbsp. soy sauce 2tbsp. corn starch
¼ water 1 green pepper

Directions:
Directions:
1. Over medium heat, cook chicken chunks in sauté pan until fully cooked
2. Drain pineapple juice into sauté pan then place pineapple chunks in a bowl
3. Add celery and soy sauce and cover. Let it simmer for ten minutes
4. While simmering, cook rice with water instructions on back of rice package
5. In a small bowl, mix cornstarch and cold water. Add to chicken until sauce thickens
6. Add pineapple chunks to sauce and chop green peppers into bite size pieces. Add to sauce
7. Let sauce simmer until rice is cooked. On a plate, make a bed of rice and pour sauce over top.
