2 large eggs 2 tbsp. shredded cheese ¼ tsp. salt
4 eggs whites’ 2 tbsp. whole wheat flour
½ butternut squash puree ½ tsp. baking powder

To puree a squash:
1. Cut off ends then slice length wise
2. Roast on stone baking sheet flesh side down for 45 minutes at 350 degrees F.
3. Scoop out flesh and place in blender. Add 1/4 cup water and blend for 2 minutes.

1. Preheat oven to 400 degrees Fahrenheit. Lightly grease 4 coffee cups and set on baking sheet
2. In bowl, whisk together eggs, egg whites, squash puree, cheese, flour, baking powder and salt until combined
3. Divide the mixture among the cups and cook for 13-15 minutes or when tops are no longer runny when poked with knife and tops are crispy
