1 ¼ cups Wesson Oil
2 cups sugar
4 eggs (beaten)
2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
3 cups shredded carrots
1 cup chopped walnuts
Raisins (if desired)

Topping:
1 (8 ounce) package cream cheese
¼ pound oleo
2 teaspoons vanilla
1 pound powder sugar

Directions:
Directions:
Mix the flour, baking powder, soda, cinnamon and salt together; add oil, sugar and eggs. Add the carrots and walnuts. Pour into a 13x9 pan and bake at 350 degrees for 1 hour. While cake is baking, mix the cream cheese and oleo until mixed well. Add the vanilla, then the powder sugar. Beat well. Allow cake to cool for 10 minutes and add the frosting to the cake.
